Kissable Recipe: Potato Salad

Ready in: 30 minutes (best if kept overnight in the fridge)

Serves:8 - 20 people (meal for few or salad for a crowd)

Difficulty: Beginner





Ingredients

  • 1 - 1 ½ Kg Large potatoes, peeled and cut into 1” cubes

  • 4 - 7 Green onions, chopped into slices (green part)

  • 5-7 Slices of bacon or salami (possibly beef or any meat you prefer), chopped into small pieces

  • 2 Tbsp Mayonnaise

  • 1 Tbsp Miracle Whip

  • ¼ Tsp Dried parsley

  • ¼ Tsp Garlic powder

  • ¼ Tsp onion powder

  • Salt and pepper to taste


Preparation


  1. Fill a medium-sized pot with water. Add the chopped potatoes with a pinch of salt and place on high heat for 10 minutes. Check to make sure the potatoes are cooked, strain, and return to pot to mix at the end.

  2. In a medium pan, spray some cooking spray and heat on the stove. Add chopped bacon or salami and stir well. Lower heat and cover for 5 minutes.

  3. Add the chopped onions, mayonnaise, miracle whip, and seasoning to the potatoes and mix well.

  4. Remove the bacon from the stove, let cool for 5 minutes, then add to the potato mixture. Mix well, place in a container, and refrigerate overnight.

Tips

Don’ t overcook the potatoes as this will make them very difficult to mix without mashing.
