Serves:8 - 20 people (meal for few or salad for a crowd)

Ingredients
1 - 1 ½ Kg Large potatoes, peeled and cut into 1” cubes
4 - 7 Green onions, chopped into slices (green part)
5-7 Slices of bacon or salami (possibly beef or any meat you prefer), chopped into small pieces
2 Tbsp Mayonnaise
1 Tbsp Miracle Whip
¼ Tsp Dried parsley
¼ Tsp Garlic powder
¼ Tsp onion powder
Salt and pepper to taste
Preparation
Fill a medium-sized pot with water. Add the chopped potatoes with a pinch of salt and place on high heat for 10 minutes. Check to make sure the potatoes are cooked, strain, and return to pot to mix at the end.
In a medium pan, spray some cooking spray and heat on the stove. Add chopped bacon or salami and stir well. Lower heat and cover for 5 minutes.
Add the chopped onions, mayonnaise, miracle whip, and seasoning to the potatoes and mix well.
Remove the bacon from the stove, let cool for 5 minutes, then add to the potato mixture. Mix well, place in a container, and refrigerate overnight.
Tips
Don’ t overcook the potatoes as this will make them very difficult to mix without mashing.
